This hearty Homemade Lasagna Soup is an easy one-pot dinner that brings all the flavors of classic lasagna into a cozy bowl. Ingredients
2 tablespoons olive oil
1 yellow onion, diced
4 cloves garlic, minced
1/2 pound ground beef
1/2 pound Italian sausage
1 tablespoon tomato paste
1 can (28 ounces) crushed tomatoes
4 cups chicken broth
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
8 ounces lasagna noodles, broken into pieces
1/2 cup heavy cream
1 cup ricotta cheese
1 cup shredded mozzarella cheese
Fresh basil, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4-5 minutes until soft.
2. Stir in minced garlic and cook for another minute.
3. Add ground beef and Italian sausage. Cook until browned, breaking it apart with a spoon. Drain excess fat.
4. Mix in tomato paste and crushed tomatoes. Pour in chicken broth, then add Italian seasoning, salt, and pepper. Bring to a simmer.
5. Add broken lasagna noodles. Cook for 10-12 minutes until pasta is al dente, stirring occasionally.
6. Reduce heat to low and stir in the heavy cream.
7. Spoon ricotta and mozzarella into each serving bowl, then ladle hot soup on top to melt the cheeses.
8. Garnish with fresh basil and serve hot.
Notes
Use mafalda or bowtie pasta if you don’t have lasagna noodles.
Cook pasta separately if freezing to avoid mushy texture.
Top with extra cheese or chili flakes for a twist.
