Description

These juicy Homemade Greek Chicken Thighs are marinated in olive oil, lemon, garlic, and oregano for the ultimate Mediterranean dinner. This easy chicken recipe is oven-roasted to crispy perfection and ideal for busy weeknights or meal prep. Pair with pita, rice, or Greek salad for a flavorful meal.


Ingredients

2 lbs chicken thighs

1/4 cup olive oil

3 tbsp fresh lemon juice

4 garlic cloves, minced

2 tsp dried oregano

1 1/2 tsp salt

1/2 tsp black pepper

1 tsp paprika

1 tbsp red wine vinegar


Instructions

1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, paprika, and red wine vinegar to make the marinade.

2. Place chicken thighs in a zip-top bag or dish, pour marinade over them, seal or cover, and refrigerate for at least 2 hours or overnight.

3. Preheat oven to 425°F. Line a baking sheet with foil or parchment and arrange the marinated chicken thighs evenly.

4. Roast the chicken for 25 to 30 minutes, flipping once halfway through, until crispy and golden.

5. Let the chicken rest for 5 minutes before serving to lock in juices.

Notes

Marinate overnight for the boldest flavor.

For extra crispiness, broil the chicken for the last 2 minutes.
