Description

Homemade Egg Drop Soup is a quick and comforting classic Chinese soup made with silky egg ribbons, savory chicken broth, and simple pantry ingredients. This easy egg drop soup recipe is perfect for a light lunch or cozy dinner and comes together in under 15 minutes. It’s low carb, customizable, and better than takeout.

Ingredients

4 cups chicken broth

2 large eggs, beaten

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon soy sauce

1/4 teaspoon white pepper

1/2 teaspoon sesame oil

2 tablespoons chopped green onions

Instructions

1. In a medium saucepan, bring chicken broth to a simmer over medium-high heat.

2. Stir in soy sauce, white pepper, and sesame oil.

3. In a small bowl, mix cornstarch with water until smooth, then whisk it into the simmering broth.

4. Lower the heat to medium-low.

5. Slowly drizzle the beaten eggs into the soup while gently stirring in a circular motion.

6. Let the egg ribbons set for about 30 seconds without stirring.

7. Turn off the heat and stir in green onions.

8. Taste and adjust seasoning if needed. Serve hot.

Notes

Use fresh eggs for the best ribbon texture.

Adjust soy sauce and pepper to taste if using low-sodium broth.

Serve immediately for the silkiest egg texture.
