Description

This homemade almond croissant filling recipe is rich, creamy, and packed with nutty flavor. Perfect for reviving day-old croissants or creating elegant bakery-style pastries at home. Made with almond flour, butter, sugar, and a touch of almond extract, this frangipane filling is a must for almond lovers.


Ingredients

115g unsalted butter

100g granulated sugar

2 large eggs

120g almond flour

15g all-purpose flour

1 tsp almond extract

1 tbsp dark rum (optional)


Instructions

1. Cream the unsalted butter and granulated sugar until light and fluffy.

2. Add the eggs one at a time, mixing well after each addition.

3. Fold in almond flour and all-purpose flour until combined.

4. Stir in almond extract and rum, adjusting to taste.

5. Use immediately or chill for 30 minutes before spreading or piping.

6. For croissants, slice in half, spread filling inside and on top, sprinkle with sliced almonds, and bake at 350°F (175°C) until golden.

Notes

You can toast the almond flour slightly for deeper flavor.

Let the filling rest before using to enhance texture.
