Description

Ingredients

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 large eggs

1 cup granulated sugar

1 cup plain yogurt

1/2 cup vegetable oil

1 tablespoon orange zest

1 teaspoon vanilla extract

1 cup fresh or frozen cranberries


Instructions

1. Preheat your oven to 350°F and grease a standard loaf pan. Line it with parchment for easy removal.

2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.

3. In a separate bowl, whisk the eggs with sugar until smooth. Add the yogurt, oil, vanilla, and orange zest. Mix well.

4. Pour the wet ingredients into the dry and stir just until combined. Fold in the cranberries.

5. Transfer the batter to the prepared pan and smooth the top.

6. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.

7. Cool in the pan for 10 minutes before removing and transferring to a wire rack.

8. Serve warm or at room temperature. Wrap and store as needed.

Notes

This loaf can be made a day ahead—the flavor deepens overnight.

Don’t overmix the batter once you add the cranberries to keep the loaf tender.

Frozen cranberries work just fine—no need to thaw.
