Ingredients

2.5 kg prime rib roast

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

6 cloves garlic, minced

3 tablespoons olive oil

2 teaspoons salt

1 teaspoon black pepper

3 tablespoons butter, softened


Instructions

1. Bring the prime rib roast to room temperature for about 1 hour before cooking.

2. Preheat your oven to 230°C to prepare for roasting.

3. In a bowl, mix rosemary, thyme, garlic, olive oil, butter, salt, and pepper into a paste.

4. Pat the roast dry and rub the herb mixture evenly over the entire surface.

5. Place the roast on a rack in a roasting pan with the fat side facing up.

6. Roast at 230°C for 20 minutes to develop a crust.

7. Reduce the temperature to 160°C and continue roasting until desired doneness is reached.

8. Remove the roast from the oven and let it rest for 20 minutes before slicing.

Letting the meat rest after roasting helps retain its juices and improves tenderness.

Using a meat thermometer ensures accurate doneness and prevents overcooking.

Fresh herbs provide the best flavor, but dried herbs can be used in smaller amounts if needed.
