Description

This Heavenly Raspberry Chocolate Mousse Cake recipe features layers of moist chocolate cake, fluffy chocolate mousse, and a tangy raspberry center. Perfect for birthdays, holidays, and special occasions, this layered chocolate raspberry dessert is both decadent and refreshing.


Ingredients

1 cup all-purpose flour

1/2 cup cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup heavy cream (for cake batter)

1 1/2 cups fresh or thawed raspberries

2 tablespoons lemon juice

2 tablespoons sugar (for raspberry layer)

1 teaspoon gelatin (for raspberry layer)

1 cup heavy cream (for mousse)

1 1/2 cups dark chocolate, chopped

1 teaspoon gelatin (for mousse)

1/4 cup water (to dissolve gelatin)

1/2 cup chocolate ganache (optional topping)

Fresh raspberries (for garnish)


Instructions

1. Preheat oven to 350°F. Prepare and grease a round cake pan.

2. In a bowl, whisk flour, cocoa powder, baking powder, and salt.

3. In another bowl, cream butter and sugar until fluffy, add eggs and vanilla, and beat until combined.

4. Mix dry and wet ingredients together, add heavy cream, stir until smooth.

5. Pour batter into the pan and bake for 25–30 minutes. Let cool completely.

6. In a saucepan, heat raspberries, lemon juice, and sugar until soft. Blend and strain to remove seeds.

7. Dissolve 1 tsp gelatin in 2 tbsp warm water and mix with raspberry puree. Let it cool slightly.

8. Pour raspberry mixture over the cooled cake and refrigerate until set.

9. Melt the dark chocolate and let it cool slightly.

10. Whip heavy cream to soft peaks.

11. Dissolve 1 tsp gelatin in 2 tbsp water, mix into melted chocolate, then fold in the whipped cream gently.

12. Spread mousse over raspberry layer. Smooth the top and refrigerate for 4 hours or until firm.

13. Optionally, top with a thin layer of ganache and fresh raspberries.

14. Chill for 1 hour before serving. Slice with a warm knife for clean cuts.

Notes

This cake is best chilled overnight for a firmer texture.

Use high-quality chocolate for a rich mousse flavor.

Make sure gelatin is fully dissolved before mixing.
