Description

These Healthy Mediterranean Chicken Tacos are packed with grilled marinated chicken, fresh vegetables, and creamy tzatziki sauce. A wholesome, protein-rich Mediterranean taco recipe perfect for a light, vibrant dinner.


Ingredients

200 g chicken breast

2 tbsp Greek yogurt

1 tbsp lemon juice

2 garlic cloves, minced

1 tsp dried oregano

1 tbsp olive oil

1 cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

2 tbsp fresh parsley, chopped

1/2 cup tzatziki sauce

6 whole wheat tortillas

1/2 tsp salt

1/4 tsp black pepper


Instructions

1. In a bowl, mix Greek yogurt, lemon juice, garlic, oregano, olive oil, salt, and pepper. Add chicken breast and coat well. Marinate for at least 30 minutes or overnight.

2. Grill or sear the marinated chicken over medium-high heat until golden brown and fully cooked. Let rest before slicing.

3. Mix cucumber, cherry tomatoes, and red onion with olive oil, lemon juice, and parsley to make a fresh topping.

4. Warm tortillas on a dry skillet for about 30 seconds per side until soft and flexible.

5. Assemble tacos by layering chicken, the vegetable mix, and a spoonful of tzatziki sauce on each tortilla. Serve immediately.

Notes

Marinate the chicken longer for deeper flavor.

Use lettuce wraps instead of tortillas for a low-carb version.

Add kalamata olives or feta cheese for extra Mediterranean flair.
