Ingredients
3 ripe bananas
1 cup Greek yogurt
1 large egg
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 and 1/2 cups whole wheat flour
Instructions
1. Preheat oven to 350°F and prepare a muffin tin with liners or non-stick spray.
2. In a large bowl, mash bananas until smooth. Add Greek yogurt, egg, maple syrup, and vanilla. Stir to combine.
3. In another bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, and salt.
4. Gently fold dry ingredients into the wet mixture until just combined.
5. Divide batter into muffin cups, filling each about 3/4 full.
6. Bake for 18 to 20 minutes or until a toothpick comes out clean.
7. Let cool for a few minutes in the pan, then transfer to a wire rack.
Notes
These muffins freeze well for up to 3 months.
You can add chocolate chips, nuts, or oats for variation.
Avoid overmixing to keep the muffins soft and fluffy.
