Description

This healthy chicken and sweet potato rice bowl is a nourishing and delicious meal prep idea made with lean chicken breast, roasted sweet potatoes, fluffy rice, and fresh greens. Perfect for clean eating, gluten-free diets, and packed with protein and fiber.


Ingredients

1 lb chicken breast

2 medium sweet potatoes

2 cups cooked rice

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

2 cups fresh spinach or kale

1 avocado

1 tbsp lemon juice


Instructions

1. Peel and cube sweet potatoes, then toss in olive oil, paprika, salt, and pepper. Roast at 400°F for 25–30 minutes until tender.

2. Season chicken with garlic powder, salt, and pepper. Cook in a skillet with olive oil until golden and cooked through, about 6–7 minutes per side.

3. Slice the cooked chicken after resting.

4. In bowls, add rice base, then top with sweet potatoes, chicken slices, fresh greens, and avocado.

5. Drizzle lemon juice over each bowl and add optional toppings if desired.

Notes

Roast sweet potatoes until edges are golden for extra flavor.
