Ingredients

2 boneless skinless chicken breasts

2 cups cooked rice

1 ½ cups corn kernels

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon garlic powder

2 tablespoons mayonnaise

2 tablespoons Greek yogurt

2 tablespoons lime juice

¼ cup Cotija cheese

2 tablespoons chopped fresh cilantro

2 tablespoons chopped green onions

½ teaspoon salt

½ teaspoon black pepper


Instructions

1. Season the chicken breasts with olive oil, chili powder, garlic powder, salt, and pepper.

2. Grill or sear the chicken on medium-high heat until fully cooked and golden brown. Let rest, then slice.

3. In a skillet, heat olive oil and add corn. Cook until slightly charred.

4. Stir in mayonnaise, Greek yogurt, lime juice, Cotija cheese, chili powder, and salt. Mix well and remove from heat.

5. To assemble, layer bowls with cooked rice, sliced chicken, and creamy street corn.

6. Top with cilantro, green onions, and an extra sprinkle of Cotija.

7. Serve warm with an optional squeeze of lime juice.

Notes

This bowl is great for meal prep and stays fresh up to 3 days.

You can substitute brown rice or quinoa for added fiber.
