Description

Ingredients

2 medium sweet potatoes

1 lb ground beef

2 tbsp olive oil

1 small red onion

1 tsp garlic powder

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

4 cups mixed greens or spinach

1 avocado

1 tbsp lime juice


Instructions

1. Preheat oven to 425°F. Peel and cube sweet potatoes, toss with olive oil, salt, and pepper. Roast for 25 minutes until golden and tender.

2. In a skillet, heat olive oil over medium. Add chopped red onion and cook until soft.

3. Add ground beef, breaking it apart as it browns. Season with garlic powder, paprika, salt, and pepper. Cook until fully browned.

4. In a bowl, layer mixed greens, roasted sweet potatoes, and ground beef.

5. Top with sliced avocado and a squeeze of lime juice.
