Ingredients
1 tablespoon olive oil
1 pound ground beef
2 medium sweet potatoes, peeled and diced
1 small yellow onion, chopped
2 cloves garlic, minced
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon black pepper
2 cups fresh spinach (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Remove from skillet and set aside.
2. In the same skillet, sauté the chopped onion and garlic until soft and fragrant.
3. Add diced sweet potatoes. Season with paprika, cumin, salt, and pepper. Stir and cover. Cook for 10 to 12 minutes until the sweet potatoes are fork-tender.
4. Return the cooked ground beef to the skillet. Stir to combine.
5. Add spinach if using, and cook just until wilted. Taste and adjust seasoning.
6. Serve hot straight from the skillet.

You can swap ground beef for ground turkey or chicken.
