Ingredients
1 lb steak (ribeye, sirloin, or flank)
2 medium zucchinis
2 tbsp olive oil
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
2 cups cooked rice or quinoa
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 avocado, diced
2 tbsp chopped parsley or cilantro
1/2 cup plain Greek yogurt or sour cream
1 tbsp lemon juice
2 tbsp mayonnaise
1 tsp hot sauce (optional)
Instructions
1. Rub steak with olive oil, garlic powder, salt, and pepper. Grill 4 to 6 minutes per side. Let rest, then slice thinly.
2. Slice zucchini lengthwise, brush with olive oil, grill 2 to 3 minutes per side until charred.
3. In a bowl, mix Greek yogurt, mayo, lemon juice, and hot sauce for the creamy sauce. Stir until smooth.
4. Assemble bowls with rice or quinoa base, then layer steak, zucchini, tomatoes, red onion, avocado, and herbs.
5. Drizzle creamy sauce over bowls just before serving.
