Description

This Grilled Shrimp Bowl with Avocado, Corn Salsa & Creamy Sauce is a vibrant and healthy dinner idea packed with smoky grilled shrimp, creamy avocado, tangy corn salsa, and a rich garlic-lime sauce. Perfect for summer meals, meal prep, or quick weeknight dinners.


Ingredients

1 lb shrimp, peeled and deveined

1 avocado, sliced

1 cup corn, grilled or canned

1 cup cherry tomatoes, diced

0.25 cup red onion, finely chopped

2 limes, juiced

0.25 cup fresh cilantro, chopped

2 tbsp olive oil

0.5 tsp salt

0.25 tsp black pepper

0.5 tsp garlic powder

0.5 tsp chili powder

0.25 cup plain Greek yogurt or sour cream

2 tbsp mayonnaise

2 cups cooked rice or mixed greens


Instructions

1. Toss shrimp with olive oil, garlic powder, chili powder, salt, and pepper. Let marinate for at least 10 minutes.

2. In a bowl, combine corn, cherry tomatoes, red onion, lime juice, cilantro, and a pinch of salt to make the corn salsa.

3. For the sauce, mix Greek yogurt or sour cream, mayonnaise, lime juice, garlic powder, and salt until smooth.

4. Grill shrimp over medium-high heat for 2-3 minutes per side until pink and slightly charred.

5. Assemble the bowl with a base of rice or greens, top with salsa, avocado slices, grilled shrimp, and drizzle the creamy sauce over everything. Garnish with more cilantro and a lime wedge if desired.

Notes

Avocados should be sliced just before serving to avoid browning.

Don’t overcook shrimp—they only need a few minutes per side.
