A delightful blend of smoky, caramelized peaches and tangy honey mustard, this dressing brings a sweet-savory balance to salads, grilled meats, and dips. The depth of flavor from grilled fruit pairs beautifully with the creamy, zesty mustard base.


Ingredients

2 ripe peaches, halved and pitted

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

2 tablespoons apple cider vinegar

3 tablespoons extra virgin olive oil

1 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder


Instructions

  1. Grill the Peaches: Preheat the grill or grill pan over medium heat. Lightly brush the peach halves with olive oil and place them cut-side down. Grill for 3–4 minutes until caramelized, then flip and grill for 2 more minutes. Let cool.
  2. Blend Ingredients: Transfer the grilled peaches to a blender or food processor. Add honey, Dijon mustard, whole grain mustard, apple cider vinegar, lemon juice, salt, black pepper, and garlic powder. Blend until smooth.
  3. Adjust Consistency: While blending, slowly drizzle in the olive oil until the dressing is creamy. Add water if needed for a thinner texture.
  4. Taste & Serve: Adjust seasoning as needed. Use immediately as a salad dressing, dip, or marinade.
