Ingredients

2 boneless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

4 slices ciabatta or sourdough bread

4 slices provolone or mozzarella cheese

1 cup fresh spinach or arugula

1 medium tomato, sliced

2 tablespoons mayonnaise or pesto

1 tablespoon butter


Instructions

1. Slice the chicken breasts horizontally for even cooking and marinate them with olive oil, garlic powder, Italian seasoning, salt, and pepper for at least 20 minutes.

2. Preheat a grill pan over medium-high heat. Grill the chicken for 4–5 minutes per side until fully cooked and charred. Let rest before slicing.

3. Spread mayonnaise or pesto on one side of each bread slice.

4. Layer the bread with cheese, grilled chicken, spinach, and tomato slices.

5. Close the sandwich with the second slice of bread. Butter the outsides.

6. Place the sandwich on a hot grill pan. Press with a heavy skillet or panini press.

7. Grill each side for 3–4 minutes or until golden and the cheese has melted.

Notes

Use ciabatta or sourdough to keep your sandwich crisp and flavorful.

If you don’t have a panini press, a heavy pan works just as well.

Switch up the spread—try garlic aioli or chipotle mayo for a fun twist.
