A fresh and flavorful Greek Chicken Salad with Tzatziki recipe that combines grilled chicken, crisp vegetables, and creamy homemade tzatziki. This protein-rich meal is perfect for a healthy lunch or light dinner. It’s gluten-free, meal-prep friendly, and bursting with Mediterranean flavor.
Ingredients
1 lb chicken breasts
1 cup Greek yogurt
2 cloves garlic
1 cup cucumber, grated
2 tbsp lemon juice
2 tbsp olive oil
1 cup cherry tomatoes, halved
1/2 red onion, sliced
1/2 cup Kalamata olives
1/2 cup feta cheese, crumbled
4 cups romaine lettuce, chopped
2 tbsp fresh dill, chopped
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. In a bowl, mix Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Add chicken breasts and coat well. Cover and refrigerate for at least 30 minutes or overnight.
2. Grate cucumber and squeeze out excess moisture. Mix with Greek yogurt, minced garlic, chopped dill, lemon juice, olive oil, salt, and pepper. Let it sit in the fridge.
3. Heat a grill or skillet over medium heat. Cook the marinated chicken until golden and fully cooked. Let rest before slicing.
4. In a large bowl, combine chopped romaine, halved cherry tomatoes, sliced red onion, olives, and crumbled feta. Top with sliced grilled chicken.
5. Spoon generous amounts of tzatziki over the salad and serve immediately. Optionally, drizzle with olive oil and more lemon juice.
Notes
This salad is best enjoyed fresh, but the chicken and tzatziki can be stored separately.
Use rotisserie chicken for a quick shortcut.
Add extra dill or chili flakes for more punch.
