Ingredients
1 ½ pounds chicken thighs
½ cup Greek yogurt
1 tablespoon lemon juice
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon garam masala
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon chili powder
1 teaspoon salt
2 tablespoons oil
2 tablespoons butter
1 medium onion, finely chopped
1 ½ cups tomato puree
¾ cup heavy cream
2 tablespoons fresh cilantro, chopped
Instructions
1. Combine Greek yogurt, lemon juice, garlic, ginger, garam masala, cumin, paprika, chili powder, and salt in a bowl. Add chicken thighs and coat well. Marinate for at least 1 hour or overnight.
2. Heat oil in a pan and sear the marinated chicken until browned and nearly cooked through. Remove and set aside.
3. In the same pan, melt butter and sautée onion until soft. Add garlic, ginger, and remaining spices. Cook until fragrant.
4. Stir in tomato puree and simmer until thickened. Pour in heavy cream and stir until sauce becomes creamy and orange-hued.
5. Return chicken to the pan and simmer until fully cooked and tender.
6. Garnish with fresh cilantro and serve hot with rice or naan.
Notes
Marinating overnight enhances flavor.
Use thighs for a juicier result, but breasts can work too.
Add a splash of cream or water when reheating to restore sauce consistency.
