Ingredients
1 pound gnocchi
2 cups shredded rotisserie chicken
2 tablespoons butter
2 tablespoons flour
2 cups chicken broth
1 cup heavy cream
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Melt butter in a large skillet over medium heat. Add diced onion and sauté for about 4 minutes until soft. Stir in garlic and cook for 1 more minute.
2. Sprinkle in flour and stir constantly to form a roux. Cook for 1 to 2 minutes to eliminate the raw flour taste.
3. Gradually whisk in chicken broth, then add the heavy cream. Stir until the sauce thickens and becomes smooth.
4. Add the shredded rotisserie chicken, frozen peas and carrots, thyme, salt, and pepper. Simmer for 5 to 6 minutes.
5. In a separate pot, cook the gnocchi according to package instructions or pan-fry for a golden crust. Drain and set aside.
6. Gently fold the cooked gnocchi into the creamy chicken mixture. Simmer for 2 to 3 minutes to combine flavors.
7. Serve hot and enjoy the comforting blend of creamy sauce and tender gnocchi.
