Ingredients
2 boneless skinless chicken breasts
0.5 cup grated Parmesan cheese
1 cup panko breadcrumbs
2 cloves garlic, minced
2 eggs, beaten
0.5 cup all-purpose flour
2 tablespoons butter
2 tablespoons olive oil
0.5 teaspoon salt
0.25 teaspoon black pepper
1 tablespoon chopped parsley (optional)
Instructions
1. Pat the chicken breasts dry and slice them in half horizontally if thick. Season both sides with salt and pepper.
2. In three shallow bowls, place flour in one, beat the eggs in the second, and mix breadcrumbs, Parmesan, and garlic in the third.
3. Dredge each chicken breast in flour, dip into eggs, and coat thoroughly in the breadcrumb mixture. Press the coating to help it stick.
4. Heat olive oil and butter in a skillet over medium heat. Add chicken and cook 4–5 minutes on each side until golden and cooked through.
5. Remove from skillet and garnish with chopped parsley if desired. Serve hot.
