Ingredients
4 boneless skinless chicken thighs
1 lb baby potatoes halved
2 tablespoons olive oil
3 tablespoons butter
5 garlic cloves minced
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Preheat oven to 400°F.
2. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat.
3. Season chicken thighs with salt, pepper, and Italian seasoning.
4. Sear chicken in the skillet until golden on both sides, about 3–4 minutes per side. Remove and set aside.
5. Add remaining olive oil and baby potatoes cut-side down. Cook until browned and starting to soften, about 8–10 minutes.
6. Lower heat to medium, add butter and minced garlic. Stir to coat the potatoes until garlic is fragrant.
7. Return chicken to skillet, sprinkle Parmesan evenly over everything.
8. Transfer skillet to oven and bake for 15–20 minutes, until chicken is cooked through and cheese is melted.
9. Remove from oven, garnish with chopped parsley. Serve hot.

Use chicken breasts if you prefer leaner meat—just watch the cook time.
Baby gold or red potatoes work best for crisp edges and creamy centers.
Freshly grated Parmesan melts better and adds more flavor than pre-shredded.
