Ingredients
1 lb chicken breast or thighs
4 garlic cloves, minced
3 tablespoons soy sauce
1 tablespoon honey
1 teaspoon cornstarch
1 teaspoon sesame oil
1 tablespoon rice vinegar
2 tablespoons vegetable oil
1 red bell pepper, sliced
2 cups broccoli florets
1 cup carrots, sliced
3 cups cooked rice
2 green onions, sliced (optional)
1 teaspoon red pepper flakes (optional)
Instructions
1. Slice the chicken into bite-sized strips and place in a bowl.
2. In a small bowl, mix soy sauce, honey, minced garlic, rice vinegar, and cornstarch to make the marinade.
3. Pour the marinade over the chicken and let sit for 15–20 minutes.
4. Heat 1 tablespoon of vegetable oil in a skillet or wok over medium-high heat.
5. Add the marinated chicken and cook until golden and fully cooked, about 5–6 minutes. Remove and set aside.
6. Add more oil to the skillet if needed. Stir-fry the bell pepper, broccoli, and carrots for 3–4 minutes until tender-crisp.
7. Return the chicken to the skillet. Stir everything together for 2 more minutes. Add sesame oil and mix well.
8. Serve over cooked rice and garnish with green onions and red pepper flakes if using.
