Description

This creamy Cajun chicken Alfredo pasta features tender garlic chicken bites, rich Cajun Alfredo sauce, spinach, artichoke hearts, and Parmesan. A bold and comforting weeknight pasta dinner recipe.


Ingredients

1 lb chicken breast, diced

2 tbsp olive oil

3 garlic cloves, minced

2 tsp Cajun seasoning

1 tsp salt

1/2 tsp black pepper

1 1/2 cups heavy cream

4 oz cream cheese

3/4 cup grated Parmesan cheese

2 cups fresh spinach

1 cup marinated artichoke hearts, chopped

12 oz pasta (fettuccine or penne)

2 tbsp butter


Instructions

1. Season diced chicken breast with Cajun seasoning, salt, and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear the chicken until golden and cooked through, then set aside.

3. In the same skillet, melt butter and add the minced garlic. Cook until fragrant.

4. Pour in heavy cream, add cream cheese, and stir until melted and smooth.

5. Add Parmesan cheese and more Cajun seasoning to taste. Stir to combine.

6. Add spinach and chopped artichokes. Simmer until spinach wilts.

7. Boil pasta until al dente. Drain and add to the skillet.

8. Return chicken to the skillet and toss everything together until well coated.

9. Serve immediately, topped with extra Parmesan if desired.

Notes

Always let the cream cheese come to room temp for easier melting.

For spicier flavor, add a pinch of cayenne or extra Cajun seasoning.

Short pasta holds sauce better and mixes easier than long noodles.
