Description

This Garlic Chicken Bites and Creamy Cajun Spinach Artichoke Alfredo Pasta recipe is a bold, comforting, restaurant-style dish made with garlic-seared chicken, creamy Parmesan Alfredo sauce, Cajun seasoning, and vibrant spinach and artichokes. Perfect for weeknight dinners or special occasions, it’s packed with flavor and easy to make.

Ingredients

1 lb chicken breast, cubed

2 tbsp olive oil

1 tbsp butter

3 cloves garlic, minced

1 ½ cups heavy cream

½ cup cream cheese

1 cup grated Parmesan cheese

1 tsp Cajun seasoning

1 ½ cups spinach, chopped

1 cup artichoke hearts, chopped and drained

8 oz pasta (penne or fettuccine), cooked al dente

½ tsp salt

¼ tsp black pepper

Instructions

1. Heat olive oil in a skillet over medium-high heat. Add chicken, season with salt, pepper, and Cajun seasoning. Cook for 5–6 minutes until golden.

2. Add garlic in the final minute of cooking and sauté until fragrant. Remove chicken and set aside.

3. In the same skillet, reduce heat and add butter. Once melted, pour in heavy cream.

4. Stir in cream cheese and whisk until smooth. Add Parmesan and Cajun seasoning. Simmer for 3–4 minutes.

5. Fold in spinach and artichokes. Cook until wilted and well combined.

6. Meanwhile, cook pasta according to package instructions. Drain.

7. Add cooked pasta and chicken back into the sauce. Stir until well combined.

8. Serve hot with extra Parmesan or red pepper flakes if desired.

You can substitute shrimp or sausage for the chicken for variation.

Reheat leftovers with a splash of milk to restore creaminess.
