Ingredients
1 lb steak (sirloin or ribeye), cut into bite-sized pieces
1 tsp salt
1 tsp black pepper
1 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
2 sprigs fresh thyme or rosemary
12 oz rigatoni pasta
1 1/2 cups heavy cream
1 cup grated parmesan cheese
1/2 tsp garlic powder
1/4 tsp salt
Instructions
1. Pat the steak dry and season with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat and sear steak for 2-3 minutes per side until golden. Remove and set aside.
3. In the same skillet, reduce heat and add butter, minced garlic, and herbs. Sizzle until fragrant. Return steak to coat in garlic butter.
4. Boil rigatoni in salted water until al dente. Reserve pasta water and drain.
5. In a saucepan, heat heavy cream. Stir in parmesan, garlic powder, and salt. Simmer until thickened. Add pasta water if needed.
6. Toss cooked rigatoni in the parmesan sauce until fully coated.
7. Plate pasta, top with garlic butter steak, spoon extra butter over, and serve warm.
Notes
Let the steak rest after searing to keep it juicy.
Grate the parmesan fresh for a smoother, more flavorful sauce.
Use pasta water to adjust the cream sauce’s consistency.
