Description

These garlic butter potatoes are the ultimate quick side dish: crispy, golden, and loaded with rich, garlicky flavor. Perfect roasted potatoes for any dinner table, using baby potatoes, butter, and fresh garlic. A versatile, gluten-free side that’s oven-baked to perfection.


Ingredients

1.5 pounds baby potatoes

3 tablespoons unsalted butter

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon salt

0.5 teaspoon black pepper

1 tablespoon chopped parsley (optional)


Instructions

1. Preheat oven to 400°F (200°C). Rinse and dry baby potatoes. Cut larger ones in half.

2. Melt butter in a small saucepan over medium heat. Add garlic and sauté for 1 minute until fragrant. Stir in olive oil and remove from heat.

3. Place potatoes in a mixing bowl. Pour garlic butter mixture over them, add salt and pepper, and toss well.

4. Spread potatoes on a parchment-lined baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway, until golden and crisp.

5. Garnish with chopped parsley if desired. Serve hot.

Notes

Use Yukon Gold or baby red potatoes for best texture.

Roast in a single layer for even crisping.
