Description

Ingredients

2 chicken breasts or thighs

12 oz rigatoni pasta

4 garlic cloves, minced

4 tablespoons unsalted butter

2 tablespoons olive oil

1 cup grated parmesan cheese

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. Season chicken with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high and sear chicken until golden brown. Remove and set aside.

2. Boil rigatoni in salted water until al dente. Reserve 1 cup of pasta water and drain the rest.

3. In the same skillet, melt butter and sauté minced garlic for 1 minute until fragrant.

4. Add chicken broth and heavy cream to the skillet. Stir in parmesan and let simmer until the sauce thickens slightly.

5. Return chicken to the skillet and add rigatoni. Mix well and add pasta water as needed to loosen the sauce.

6. Simmer for a few minutes until everything is coated and heated through.

7. Garnish with more parmesan and fresh parsley before serving.

Notes

Use freshly grated parmesan for best flavor and texture.

Add spinach or mushrooms for extra veggies.

Reheat with a splash of broth or milk to maintain creaminess.
