Description

Ingredients

20 ounces cheese tortellini

1½ cups cherry tomatoes, halved

1 cup cucumber, diced

1 cup red bell pepper, diced

⅓ cup red onion, thinly sliced

½ cup black olives, sliced

¼ cup fresh basil, chopped

¾ cup Italian dressing

¼ cup grated Parmesan cheese, optional

¼ teaspoon kosher salt

⅛ teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil and cook tortellini according to package directions until just tender.

2. Drain tortellini and rinse under cold water to stop cooking, then spread on a tray to cool completely.

3. Prep vegetables by halving cherry tomatoes, dicing cucumber and bell pepper, thinly slicing red onion, and chopping basil.

4. Add cooled tortellini, tomatoes, cucumber, bell pepper, onion, olives, and basil to a large bowl.

5. Pour Italian dressing over the salad and toss gently until evenly coated.

6. Season with salt and pepper, add Parmesan if using, and toss again.

7. Cover and refrigerate for 30 minutes to 2 hours to let flavors meld, then serve chilled.
