Description

This French Onion Potato Bake is a creamy, cheesy casserole layered with caramelized onions, tender Yukon Gold potatoes, and melted Gruyère. It’s the perfect comfort food side dish or main course, full of flavor and ideal for cozy dinners. Great for holidays or any day you need a hearty, oven-baked classic.


Ingredients

4 large yellow onions

2 pounds Yukon Gold potatoes

4 tablespoons butter

1 ½ cups beef broth

2 cups shredded Gruyère or Swiss cheese

1 teaspoon dried thyme

2 cloves garlic, minced

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. In a large skillet, melt butter over medium-low heat. Add sliced onions and cook for 30–40 minutes until caramelized. Stir in garlic and thyme during the last 5 minutes.

2. Preheat the oven to 375°F. Thinly slice potatoes evenly, preferably with a mandoline.

3. In a greased baking dish, layer potatoes, caramelized onions, and shredded cheese. Repeat until all ingredients are used. Pour beef broth over the top.

4. Cover with foil and bake for 35 minutes. Uncover and bake an additional 20–25 minutes until top is golden and bubbly.

5. Let the dish rest for 10 minutes before serving. Garnish with fresh thyme or chives if desired.

Notes

Use Yukon Gold potatoes for the best texture.

Caramelize the onions low and slow for deep flavor.

For extra richness, add cooked bacon between layers.
