Description

Ingredients

1 pound ground beef

2 large yellow onions, sliced

1 can (10.5 oz) French onion soup

1 cup beef broth

1 cup long grain white rice, uncooked

2 tablespoons butter

1 cup shredded mozzarella cheese

1 cup shredded Swiss or Gruyere cheese

1 teaspoon garlic powder

Salt and pepper to taste


Instructions

1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess grease. Season with garlic powder, salt, and pepper.

2. In the same skillet, melt butter and add sliced yellow onions. Cook for 15-20 minutes, stirring occasionally, until caramelized.

3. Add French onion soup and beef broth to the skillet. Stir in uncooked rice. Bring to a simmer and let cook for 5 minutes.

4. Transfer the mixture to a greased 9×13-inch baking dish. Cover with foil and bake at 375°F (190°C) for 45 minutes.

5. Remove foil, sprinkle mozzarella and Swiss cheese over the top. Bake uncovered for 10-15 more minutes until cheese is bubbly and golden.

6. Let casserole rest for 5 minutes before serving to allow the flavors to meld.

Notes

This casserole gets even better the next day.

Use Gruyere cheese if you want a bolder flavor.

For added richness, stir in a splash of heavy cream with the broth.
