This Flavorful Indian-Style Okra Recipe is a quick, healthy and spiced vegetarian dish that’s perfect as a side or main. Made with okra, onions, tomatoes, and aromatic Indian spices, it’s a gluten-free and vegan recipe ideal for weeknight dinners or meal prep.
Ingredients
1 lb okra
1 medium onion
1 medium tomato
3 cloves garlic
1 inch piece ginger
1 green chili
0.5 tsp turmeric powder
1 tsp ground coriander
0.5 tsp garam masala
0.75 tsp salt
2 tbsp oil
2 tbsp chopped cilantro
Instructions
1. Wash and thoroughly dry the okra, then slice off stems and tips before chopping into bite-sized pieces.
2. In a skillet, heat oil over medium heat and sauté chopped onions until golden.
3. Add minced garlic, ginger, and green chili. Cook until fragrant.
4. Stir in turmeric powder, ground coriander, and salt. Add tomatoes and cook until softened.
5. Add okra and cook uncovered for 10–12 minutes, stirring occasionally, until tender but slightly crisp.
6. Sprinkle garam masala, stir well, cook 1 more minute, then turn off heat.
7. Garnish with chopped cilantro and serve warm.
Notes
Drying the okra well prevents sliminess.
Adjust the chili based on your spice preference.
Use frozen okra if fresh is unavailable—just thaw and pat dry first.
