Ingredients
4 salmon fillets
1⁄4 cup soy sauce
2 tablespoons brown sugar
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1 teaspoon cornstarch
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 cups cooked jasmine rice
1 cup edamame, steamed
1 cucumber, thinly sliced
1 cup shredded carrots
2 scallions, chopped
1 tablespoon toasted sesame seeds
Instructions
1. In a saucepan, mix soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil.
2. Simmer until the sugar dissolves, then whisk in cornstarch slurry to thicken. Set aside.
3. Season salmon with salt and bake at 400°F for 10–12 minutes, or until flaky. Brush teriyaki glaze on during last minutes.
4. While salmon cooks, prepare rice, steam edamame, and chop veggies.
5. Assemble bowls by dividing rice, topping with flaked salmon, veggies, and drizzle with teriyaki glaze.
6. Sprinkle with sesame seeds and serve warm.
