Ingredients

1 pound large shrimp, peeled and deveined

8 ounces linguine or spaghetti (optional)

3 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

½ teaspoon red pepper flakes (optional)

½ cup dry white wine (or chicken broth)

Juice of 1 lemon

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

Extra lemon wedges, for serving


Instructions

  1. Cook the Pasta (if using): Boil salted water and cook linguine according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.
  2. Sauté the Shrimp: Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Make the Garlic Butter Sauce: Lower the heat to medium, then add the remaining butter and olive oil. Stir in the garlic and red pepper flakes, cooking for about 30 seconds until fragrant.
  4. Deglaze with Wine: Pour in white wine (or chicken broth) and let it simmer for 2-3 minutes to cook off the alcohol and develop flavor.
  5. Combine Everything: Add lemon juice, salt, and black pepper. Return the shrimp to the skillet and toss to coat in the sauce. Simmer for 1 more minute. If needed, add reserved pasta water to loosen the sauce.
  6. Garnish & Serve: Remove from heat, sprinkle with Parmesan cheese and fresh parsley. Serve immediately over pasta or with crusty bread, along with extra lemon wedges.
