Ingredients

6 large eggs

3/4 cup granulated sugar

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon vanilla extract

1 1/4 cups heavy whipping cream

1/4 cup powdered sugar

1 1/2 cups pitted cherries

1/4 cup chocolate shavings (optional)

Extra powdered sugar for dusting


Instructions

1. Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.

2. In a large bowl, beat the eggs and granulated sugar with an electric mixer for 5-6 minutes until thick and pale.

3. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.

4. Gently fold the dry ingredients into the egg mixture. Add vanilla and mix just until combined.

5. Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes until springy to the touch.

6. While still hot, invert the cake onto a clean towel dusted with powdered sugar. Peel off parchment and gently roll the cake in the towel. Let cool completely.

7. Beat heavy cream with powdered sugar until stiff peaks form. Refrigerate until needed.

8. Carefully unroll the cooled cake. Spread the whipped cream evenly over the surface and top with cherries.

9. Gently re-roll the cake without the towel. Place seam-side down and refrigerate for at least 1 hour.

10. Dust with powdered sugar or cocoa powder and garnish with chocolate shavings before serving.

Notes

Let the sponge cool completely before adding cream.

Don’t over-whip the cream or it will curdle.

Use firm but ripe cherries to avoid excess moisture.
