Description

Ingredients

1 cup eggnog

1 cup all-purpose flour

2 large eggs

2 tablespoons melted butter

1 pinch salt

1 teaspoon vanilla extract

1/4 teaspoon ground nutmeg (optional)


Instructions

1. In a blender, combine eggnog, eggs, melted butter, flour, salt, vanilla extract, and nutmeg.

2. Blend until the batter is smooth and lump-free.

3. Let the batter rest in the fridge for 30 minutes.

4. Heat a nonstick skillet over medium heat and lightly butter the surface.

5. Pour 1/4 cup of batter into the pan and swirl to coat the bottom.

6. Cook for 1–2 minutes, flip, and cook the other side until golden.

7. Repeat until all batter is used, stacking crêpes on a plate.

8. Serve with your choice of fillings and toppings.

Notes

Resting the batter is key to soft, pliable crêpes.

Use a blender for the smoothest batter texture.
