Ingredients
1 1/4 cups all-purpose flour
1/2 cup unsalted butter
2 tablespoons sugar
1/4 teaspoon salt
1 egg yolk
2 to 3 tablespoons ice water
1/2 cup heavy cream
1 1/2 cups prepared eggnog
3 egg yolks
2 tablespoons cornstarch
1/3 cup sugar
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
1/2 cup granulated sugar
2 tablespoons water
Instructions
1. Mix flour, sugar, and salt. Cut in butter until crumbly.
2. Add egg yolk and ice water to form dough. Chill 30 minutes.
3. Roll out and press into tart pan. Prick base and blind bake at 375°F (190°C) for 20 minutes. Cool completely.
4. In saucepan, whisk eggnog, cream, sugar, cornstarch, and nutmeg.
5. Cook until thick, stirring constantly.
6. Off heat, whisk in vanilla and egg yolks one at a time.
7. Return briefly to heat until glossy and thick.
8. Pour custard into tart shell. Refrigerate 4 hours or overnight.
9. For caramel shards, cook sugar and water until amber.
10. Pour onto parchment paper and let harden, then break into shards.
11. Top chilled tart with caramel shards just before serving.
Notes
Use real eggnog for the richest flavor.
Add caramel shards right before serving to maintain crunch.
Chill the tart shell before baking to prevent shrinkage.
