Description

Ingredients

4 cups chicken broth

1 tablespoon cornstarch

2 large eggs

1 tablespoon soy sauce

1/4 teaspoon ground white pepper

1/2 teaspoon sesame oil

2 tablespoons green onions, chopped

1 teaspoon fresh ginger, grated (optional)


Instructions

1. In a medium pot, bring the chicken broth to a gentle simmer over medium heat. Stir in the soy sauce, white pepper, sesame oil, and ginger if using.

2. In a small bowl, mix the cornstarch with 2 tablespoons of cold water. Whisk into the simmering broth, stirring constantly until slightly thickened.

3. Beat the eggs in a separate bowl. Slowly drizzle them into the broth while stirring in one direction to create silky ribbons.

4. Turn off heat, add green onions, and serve immediately while hot.

Notes

Use low-sodium broth to control saltiness.
