Description

Ingredients

1.5 pounds chicken breasts or thighs

2 tablespoons olive oil

4 cloves garlic, minced

1/2 cup sun-dried tomatoes, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups fresh spinach

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

1/2 cup chicken broth


Instructions

1. Cut chicken into bite-sized pieces and season with salt, pepper, and Italian seasoning.

2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden and cooked through. Remove and set aside.

3. In the same skillet, add more olive oil if needed. Sauté garlic until fragrant, then stir in sun-dried tomatoes.

4. Pour in the heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese until melted and smooth.

5. Add spinach to the sauce and let it wilt.

6. Return the chicken to the pan. Simmer everything together for a few minutes until well combined. Serve warm.

Notes

Cream sauce may thicken upon standing—add a splash of broth when reheating.

Use pre-cooked rotisserie chicken to save time.
