This easy taco soup with ground beef is the perfect weeknight dinner. Made in one pot with canned beans, corn, tomatoes, and flavorful taco seasoning, it’s a hearty Tex-Mex comfort food recipe that’s simple, satisfying, and perfect for meal prep. Ideal for family dinners or freezer meals.
Ingredients
1 tablespoon olive oil
1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
2 tablespoons taco seasoning
1 can diced tomatoes (14.5 oz)
1 can tomato sauce (8 oz)
1 can black beans (15 oz), drained and rinsed
1 can kidney beans (15 oz), drained and rinsed
1 can corn kernels (15 oz), drained
3 cups beef broth
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
2. Add diced onion and minced garlic. Sauté until the onion is soft and translucent, about 3-4 minutes.
3. Stir in the taco seasoning until the beef mixture is evenly coated.
4. Add diced tomatoes, tomato sauce, black beans, kidney beans, corn, and beef broth. Stir to combine.
5. Bring the soup to a boil, then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
6. Season with salt and pepper to taste, then ladle into bowls. Serve hot with your favorite toppings.
Notes
Use 85% lean ground beef for the best flavor without excess grease.
Add more broth if you prefer a thinner soup.
Top with shredded cheese, sour cream, tortilla chips, or avocado for extra flavor.
