This Easy Mediterranean Chicken Stir Fry is a healthy 30-minute dinner packed with bright vegetables, juicy chicken breast, and zesty Mediterranean spices. Perfect for meal prep or a weeknight dinner, it’s a gluten-free, low-carb option loaded with flavor.
Ingredients
1 lb chicken breast
2 tbsp olive oil
1 red bell pepper
1 yellow bell pepper
1 medium zucchini
1 cup cherry tomatoes
1 small red onion
3 cloves garlic
2 tbsp lemon juice
1 tsp dried oregano
½ tsp salt
½ tsp black pepper
2 tbsp fresh parsley or basil
Instructions
1. Cut the chicken breast into bite-sized pieces and season with salt, pepper, and oregano.
2. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5–7 minutes until golden and cooked through. Remove from skillet and set aside.
3. In the same skillet, add more olive oil if needed. Stir fry the sliced red and yellow bell peppers, zucchini, and red onion for 5 minutes.
4. Add cherry tomatoes and minced garlic. Stir and cook for another 2–3 minutes until tomatoes begin to burst.
5. Return the chicken to the skillet. Add lemon juice and toss everything together. Cook for 1–2 more minutes.
6. Garnish with fresh parsley or basil before serving.
Notes
Use high heat if using frozen veggies to avoid sogginess.
Add olives or feta for extra Mediterranean flavor.
