Description

This easy homemade popovers recipe in a muffin tin delivers golden, airy, bakery-style results using simple pantry ingredients. No special pan needed. Perfect for breakfast, brunch, or as a savory dinner side dish.

Ingredients

1 cup all-purpose flour

1 cup milk

2 large eggs

0.5 teaspoon salt

2 tablespoons butter (for greasing)

Instructions

1. Preheat your oven to 450°F. Place your muffin tin in the oven to heat.

2. In a blender or mixing bowl, combine the eggs, milk, flour, and salt. Blend or whisk until smooth.

3. Let the batter rest at room temperature for 10 to 15 minutes.

4. Remove the hot muffin tin from the oven. Generously grease each cup with butter.

5. Pour the batter into each muffin cup, filling about halfway.

6. Bake at 450°F for 15 minutes. Without opening the oven, reduce the temperature to 350°F and bake for another 15 to 20 minutes.

7. Remove from oven when puffed and golden. Serve immediately.

Notes

Let the batter rest to improve texture and rise.

Avoid opening the oven door during baking to prevent collapsing.

Use a blender for the smoothest batter, but hand-whisking works too.
