Description

This easy garlic-parmesan chicken bites recipe is a flavorful weeknight dinner idea served with sun-dried tomato Cajun Alfredo and charred broccolini. A perfect combo of crispy, creamy, and spicy, ideal for meal prep or hosting.


Ingredients

500g chicken breast

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup grated parmesan cheese

1/2 cup all-purpose flour

2 eggs

2 tablespoons olive oil

2 tablespoons butter

1 cup heavy cream

1/3 cup sun-dried tomatoes (chopped)

1 tablespoon Cajun seasoning

2 garlic cloves (minced)

1 bunch broccolini


Instructions

1. Cut chicken breast into bite-sized pieces and pat dry.

2. In separate bowls, prepare seasoned flour, beaten eggs, and grated parmesan.

3. Dredge chicken in flour, dip in egg, then coat with parmesan.

4. Heat olive oil and butter in a skillet. Sear chicken until golden and cooked through. Remove and set aside.

5. In the same skillet, melt butter. Add garlic, sun-dried tomatoes, and Cajun seasoning. Sauté until fragrant.

6. Pour in heavy cream. Simmer until slightly thickened. Season to taste.

7. Toss broccolini in olive oil and salt. Sear or grill until charred and tender.

8. Serve Alfredo sauce on a plate, top with chicken bites, and place broccolini on the side. Garnish with parmesan or herbs.

Notes

Use freshly grated parmesan for the best flavor and crisp.

Store sauce and chicken separately for crispier leftovers.

Add a splash of cream when reheating sauce to restore texture.
