Ingredients

2 large chicken breasts

4 garlic cloves, minced

3 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon Cajun seasoning

1 1/2 cups heavy cream

3/4 cup Parmesan cheese, grated

8 oz fettuccine or penne pasta

2 tablespoons chopped parsley


Instructions

1. Cut the chicken into bite-sized cubes and pat them dry. Season with salt, pepper, paprika, and Cajun seasoning.

2. Heat olive oil and 1 tablespoon of butter in a skillet. Add the minced garlic and cook for 30 seconds until fragrant.

3. Add the chicken and sear until golden brown and cooked through. Remove and set aside.

4. Lower the heat, pour in the heavy cream, and stir in the Cajun seasoning. Simmer for 2-3 minutes.

5. Add the Parmesan cheese and stir until the sauce is melted and smooth.

6. Cook the pasta in salted boiling water until al dente. Reserve 1/4 cup pasta water and drain.

7. Return chicken to the sauce. Add cooked pasta and toss to coat. Use reserved pasta water if sauce is too thick.

8. Finish with chopped parsley and serve hot.

Notes

Use chicken thighs for a juicier texture if preferred.

For extra spice, double the Cajun seasoning or add chili flakes.

Reheat with a splash of milk to restore the Alfredo’s creamy texture.
