Ingredients
12 Medjool dates
6 tablespoons peanut butter
3 tablespoons chopped peanuts
1 cup dark chocolate chips
1 tablespoon coconut oil
1 teaspoon sea salt (optional)
Instructions
1. Slice each Medjool date open lengthwise and remove the pit, keeping the date intact like a book.
2. Fill each date with about a teaspoon of peanut butter.
3. Sprinkle chopped peanuts over the peanut butter filling.
4. Freeze the stuffed dates for 10–15 minutes to help them firm up.
5. Melt dark chocolate with coconut oil in the microwave or double boiler until smooth.
6. Dip each date in the chocolate using a fork, let excess drip off, and place on parchment paper.
7. Sprinkle with sea salt if using.
8. Chill again in the fridge or freezer until the chocolate sets.
