Ingredients
2 English cucumbers
1 small red onion
1/2 cup white vinegar
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh dill (optional)
Instructions
1. Thinly slice cucumbers and place them in a colander. Sprinkle with salt and let them sit for 20–30 minutes to draw out moisture.
2. While cucumbers rest, whisk together white vinegar, sugar, remaining salt, and black pepper in a small bowl until sugar dissolves.
3. Pat cucumbers dry and transfer to a large bowl. Add sliced red onion and pour dressing over. Toss well to coat.
4. Cover and refrigerate for at least 30 minutes before serving. Add fresh dill if using and toss again.
