Ingredients
4 boneless skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup all purpose flour
2 tablespoons olive oil
3 tablespoons butter
8 ounces sliced mushrooms
3 cloves garlic minced
3/4 cup dry Marsala wine
3/4 cup chicken broth
1/2 cup heavy cream
2 tablespoons fresh parsley chopped
Instructions
1. Pat the chicken breasts dry and season both sides with salt and black pepper. Lightly dredge each piece in flour and shake off excess.
2. Heat olive oil in a large skillet over medium heat. Add the chicken and cook for 5 to 6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
3. In the same skillet melt the butter. Add mushrooms and cook for 6 to 8 minutes until softened and lightly browned.
4. Add minced garlic and cook for 30 seconds until fragrant.
5. Pour in Marsala wine and scrape the bottom of the pan to release browned bits. Simmer for 3 to 4 minutes to reduce slightly.
6. Add chicken broth and heavy cream. Stir well and simmer for 5 to 7 minutes until sauce thickens.
7. Return chicken to the skillet and spoon sauce over the top. Simmer for another 3 to 4 minutes.
8. Garnish with fresh parsley and serve warm.
Notes
Use dry Marsala wine for the most authentic flavor and balanced sauce.
If the sauce thickens too much, add a splash of chicken broth to loosen it.
For extra richness, add 1 tablespoon grated parmesan to the sauce before serving.
