This easy cowboy casserole recipe is a comforting family dinner made with ground beef, creamy soup, cheese, and crispy tater tots. Perfect for busy weeknights, it’s hearty, cheesy, and simple to prepare. Serve with green beans or cornbread for a full meal.
Ingredients
1 pound ground beef
1 small yellow onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1/2 cup sour cream
2 cups shredded cheddar cheese
1 cup frozen corn
1 bag (32 oz) frozen tater tots
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is tender.
2. Add minced garlic and cook for an additional minute, then drain any excess fat.
3. Stir in cream of mushroom soup, sour cream, salt, and pepper. Mix until well combined and heated through.
4. Fold in frozen corn and remove skillet from heat.
5. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
6. Spread beef mixture evenly in the baking dish.
7. Sprinkle half of the shredded cheddar cheese over the beef layer.
8. Arrange frozen tater tots in a single layer over the top.
9. Sprinkle remaining cheddar cheese on top of the tater tots.
10. Bake uncovered for 35–40 minutes, until tots are golden and cheese is bubbly.
11. Let cool for 5 minutes before serving.
Notes
This recipe serves about 6 people.
For extra flavor, try seasoned tater tots or mix in chopped bacon or jalapeños.
If using higher-fat ground beef, always drain to avoid a greasy casserole.
