Ingredients

4 boneless, skinless chicken breasts

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ cup all-purpose flour (for dredging)

3 tablespoons unsalted butter, divided

2 tablespoons olive oil

1 cup mushrooms, sliced

¾ cup Marsala wine

½ cup chicken broth

½ teaspoon dried oregano

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped


Instructions

  1. Prepare the Chicken – Slice each chicken breast in half horizontally to create thinner pieces. Season with salt, pepper, and garlic powder. Lightly dredge in flour, shaking off excess.
  2. Sear the Chicken – Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden brown. Remove from the skillet and set aside.
  3. Cook the Mushrooms – In the same skillet, add the remaining tablespoon of butter and sauté the mushrooms for about 4 minutes until softened.
  4. Make the Sauce – Pour in the Marsala wine and chicken broth, stirring to deglaze the pan. Let it simmer for 5 minutes until slightly reduced. Stir in the dried oregano.
  5. Assemble the Dish – Return the seared chicken to the skillet and spoon some of the sauce and mushrooms over it. Sprinkle mozzarella and Parmesan cheese evenly on top.
  6. Bake Until Bubbly – Preheat the oven to 400°F (200°C). Transfer the skillet to the oven and bake for 10–12 minutes until the cheese is melted and bubbly.
  7. Garnish and Serve – Let the dish rest for a couple of minutes, then sprinkle fresh parsley on top. Serve with pasta, rice, or crusty bread.
