Ingredients
2 cups cooked shredded chicken
4 cups chicken broth
1 can cream of chicken soup
1 can refrigerated biscuit dough
1 cup milk
1 small onion, finely chopped
2 carrots, peeled and diced
2 celery stalks, diced
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme or poultry seasoning
Instructions
1. Melt butter in a large Dutch oven over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5 to 7 minutes.
2. Pour in chicken broth, cream of chicken soup, and milk. Stir until smooth and bring to a simmer.
3. Add cooked shredded chicken along with salt, pepper, and thyme. Let simmer for 5 to 10 minutes.
4. Quarter biscuit dough pieces and drop into the pot. Stir gently. Reduce heat, cover, and cook for 15 to 20 minutes until biscuits are fluffy and cooked through.
5. Gently stir before serving hot in bowls with a spoonful of the creamy broth and dumplings.
